I am planning on accepting credit cards over the internet, in person and over the phone. I need something reliable and solid and of course I am willing to pay more for a better co. that will provide the service in that reliable fashion.

You need a company that will set you up for a program that will allow you to get low swiped rates for your in person sales, and cost plus interchange (visa/MC rates) for the cards processed via phone and Internet. This can be done with one account instead of 3, saving you money on extra statement fees.
You also should look for a company that is honest and ethical in business with a great track record.
You want the company to know as much about your business as possible: who you sell to, what you sell, projected volume.
Last but not least a company that is backed by a name you can trust, CHASE.
